Collagen Peptides: What Two New Studies Report on Hair Condition and Frozen Dough

Collagen peptides are short chains of amino acids produced by breaking down collagen from animal or fish sources, and they are studied both as a dietary supplement ingredient and as a functional additive in food manufacturing. Two recent papers illustrate how far apart those two research tracks are.

Hair condition in a placebo-controlled trial

A randomized, double-blind, placebo-controlled trial published in the International Journal of Stem Cells evaluated low-molecular-weight collagen peptide GT at 3 g per day for 24 weeks in Korean adults aged 19 to 60 who had mild to moderate hair damage but not alopecia. The authors report that, compared with placebo, the treatment group showed significant improvements in hair gloss measured by gloss meter and scanning electron microscopy, and in hair elasticity assessed by tensile strength and hair diameter.

The same trial reports improvements in participants' own ratings of gloss, elasticity, thickness, texture, fullness and appearance, along with a significant increase in scalp elasticity. No treatment-related adverse events were observed, and the authors conclude the supplement was safe and effective for overall hair condition in this specific group.

Freeze stability in wheat gluten

Separately, a study in Food Research International tested fish skin collagen peptides at 0 to 2.0 percent by weight in gluten proteins during freezing, a food-processing question rather than a health one. The researchers report that at day 28 of freezing, 1.5 percent fish skin collagen peptide increased bound water relative to the control, with disulfide bond content up 69.69 percent and median particle size down 36.40 percent.

The same paper reports water-holding capacity increased by 37.54 percent while oil-holding capacity fell by 25.50 percent, and the authors describe the peptides as a cryoprotectant that may help limit freeze-induced deterioration in frozen flour-based foods. Nothing in that work involved human consumption or a health outcome.

What Isn't Established

The hair trial does not report the number of participants enrolled, and its results apply only to adults with damaged hair who did not have alopecia. The authors note that clinical efficacy of low-molecular-weight collagen peptides for hair damage had not previously been clearly established, and the gluten study measured protein chemistry in a food matrix, not any effect in people.

State of the evidence

These two papers do not answer the same question and cannot be combined into one. One is a single clinical trial in a narrowly defined group, the other is laboratory food science.
